Ballynahinch is the real deal for anyone who's ever romanticised the idea of a proper Irish castle stay. A crenellated Victorian mansion on 700 acres of riverside woodland at the foot of the Twelve Bens mountain range, it sits squarely on the banks of one of Ireland's finest salmon rivers. Six log fires burn in the public rooms, the staff genuinely know your name, and the food is seriously good. It's more manor house than fortress, which means the atmosphere is warm and lived-in rather than stiff and ceremonial.
