Why It Matters

Goujon holds 3 Michelin stars (since 2010), 19.5/20 and 5 toques at Gault & Millau, and was named Meilleur Ouvrier de France. TripAdvisor named it the world's best fine dining restaurant in 2020. The wine cellar runs to nearly 900 references, 80% from Languedoc. His sons Enzo (savoury) and Axel (pastry) now work alongside him. The signature dish — a soft-cooked egg 'pourri' with black truffle melanosporum, mushroom purée, warm brioche, and drinkable truffle cappuccino — has become one of France's most talked-about plates.
A three-Michelin-starred restaurant with a small hotel attached, sitting in Fontjoncouse — a garrigue village of around 140 people in the Aude, between Narbonne and the coast. Gilles Goujon and his wife Marie-Christine have run this place since 1992, building it from a village inn into one of France's most decorated culinary addresses. The 14 rooms across two buildings are genuinely comfortable, the pool catches the southern sun, and the restaurant is the entire reason to make the drive.

The Pays Cathare surrounds the property with around 20 heritage sites — ruined fortresses, abbeys, medieval towns. Quéribus (perched at 728m) is under an hour away. Fontfroide Abbey and the medieval village of Lagrasse are also within reach.

'Encore un peu de Gilles Goujon' — a shop opposite reception selling tableware seen in the restaurant, the exclusive chef's knife, the 'georgette' fork-spoon for the truffle egg, tabliers, carafes, cassoulet, duck confit, pâtés and rillettes.
