Why It Matters
The Michelin-starred restaurant at the resort (confirmed 1 star in the 2026 MICHELIN Guide Italia) is the main draw — many guests drive out from Rome just to eat and leave, so booking a room means you get the table plus the spa, the pool, and the estate walks. The spa draws on springs with Roman-era origins: Emperor Alexander Severus reportedly used the Valle Fredda thermal waters for cures in the 2nd century AD.
Antonello Colonna — once nicknamed the 'anarchist in the kitchen' — started cooking in Labico in 1985. In 2012 he added a twelve-room boutique resort to his Michelin-starred restaurant on the Valle Fredda estate, a 20-hectare working farm in the Castelli Romani natural park, about 40 minutes from Rome. The property doubles as a functioning art gallery and event space, which means you might walk from your room to a photography exhibition, then straight into a tasting menu dinner. Concrete, glass, and steel dominate the architecture — it reads more like a contemporary art museum than a country house. But the fields of wheat and poppies outside keep it grounded.

The resort functions as a rotating contemporary art gallery — the Galleria Antonello Colonna. The annual programme covers art, architecture, photography, design, and fashion. Exhibitions, conferences, workshops, seminars, and shows are held throughout the year. Works of art are scattered throughout the common areas.

Walks across the Valle Fredda estate and along the ancient Via Labicana Roman road, recently restored by Chef Colonna. Fields of wheat and poppies, chestnut and hazelnut groves, and fruit orchards of forgotten varieties. The route connects the Colosseum to Labico through the natural park.
The estate grows and harvests its own produce. Guests can arrange food and wine tastings using products from the Valle Fredda farm and the resort's extensive wine cellar, which stocks rarities from the best Italian producers.
The Castelli Romani wine zone — home to Cesanese and other local varietals — is on the doorstep. The resort can assist with visiting local producers. Zagarolo wine trail is nearby.
