Why It Matters
The hotel building itself is the draw: the Palais Adelebsen is the only intact Baroque aristocratic manor from Celle's 17th-century court period. It was saved from demolition in 1969 by the Earl of Hardenberg and opened as a hotel in 1970. The on-site Italian restaurant has 16 Gault & Millau points and 7 Gusto pans — serious recognition for a town this size.
A 1670 Baroque palace — the last of Celle's aristocratic manor houses still standing in its entirety — converted into a 5-star hotel in 1970 and part of the Althoff Collection since 2005. Sixty-two rooms spread across the historic Palais Adelebsen and a newer annex, all done up in warm earth tones and light oak furniture with country-house sensibility. The Italian restaurant Taverna & Trattoria Palio punches well above the town's weight, and the quiet courtyard garden is one of those spots you end up spending an unplanned afternoon in.
